This cuvée has been produced since 2015 to pay tribute to the first historical mention of the estate in a medieval parchment nearly 1000 years ago, in 1204. The terroirs of the PEYRASSOL hills and slopes are spread over a vast territory of more than 850 hectares. Our parcels benefit from all exposures: at the foot of the slopes, on the sides, and at the top of our plateaus. Multiple parcel-specific microclimates, combined with our limestone soils spread out in dolines, allow us to obtain grapes of great diversity each year. For us, this diversity is the best source of complexity in our wines. The rosé cuvée 1204 is the result of our desire to highlight this complexity. Exclusive, this pure gastronomic wine comes exclusively from old vines.
Soil
Triassic clay and limestone.
Vintage 2021
Marked by a particularly hot and dry climate, the 2019 vintage in Provence benefited from a few showers in the interior valley terroirs at the beginning of September. The harvest, under particularly mild skies, confirmed the quality of the crop.
Tasting notes
Very pale pink color with pearly reflections. The nose combines sweet spices, floral notes, and exotic wood with an almost chalky softness. The palate is full, enveloping, and delicate. A beautiful length mixes notes of lemon zest with the creamy character of the wood and a balanced acidity.
Grap varieties
40 % cinsault, 30 % grenache, 30 % tibouren
Vinification
To reveal the character of each of our parcels as precisely as possible, we have chosen to vinify separately in very small units, a fine selection of our best terroirs, from which we select the best fraction of the rosé juice. Thus, in the cellar, we isolate a multitude of small individual lots in sandstone jars. Fermented and aged with the greatest care, these wines allow us not only to understand each year a little more precisely the potential of our parcels but also to carry out complex and crossed blending trials from lots of great purity. Fermentation in stainless steel tanks at controlled temperature.
Pairing
A cellaring rosé with a strong personality, the cuvée 1204 is a great wine that will enhance the tasting of a fine bouillabaisse, stuffed calamari, or, why not, Peking-style roasted duck.
Growing
Sustainable agriculture, in organic conversion. For this cuvée, the grapes are sourced from a parcel selection, harvested separately by hand during the coolest hours of the day.
Aging
10 months with regular bâtonnage for 3 months. 60% aged in three-wine barrels, 40% aged in sandstone jars. Partial malolactic fermentation.
Keeping
Perfect to drink today, it can be kept for another 2 years.
